Ingredients for the Pineapple Fried Rice recipe:

1 ripe pineapple1/4 cup (60ml/2 fl oz.) oil3 cloves garlic, chopped1 onion, chopped1-2 teaspoons chopped red chillies 150 g (5 oz.) pork loin, diced 150 g (5 oz.) peeled raw prawns 3 cups (550 g/1lb 2 oz.) cold cooked rice (see Hint)2 tablespoons finely chopped Thai basil2 tablespoons fish sauce3 spring onions, finely sliced2 tablespoons chopped coriander leaves green chillies

Directions for the Pineapple Fried Rice recipe:

1. When you want to try the Saffron Rice recipe you should start by cutting the pineapple in half lengthways. Cut and scoop out the flesh with a knife by cutting around the edge of the pineapple. Chop into really small pieces.

2. Next step begins by heating 1 tablespoon of oil in a wok over high heat, adding the garlic, the onion and the chillies to the wok and cooking for 1 minute. After that add the pork and stir-fry for 2 or 3 minutes. After that add the prawns and stir-fry for another 2 or 3 minutes. Remove the meat from the wok and set it aside. Reheat the wok and stir-fry the small pineapple pieces for 2 or 3 minutes and remove from the wok.

3. In this step we begin by heating the remaining oil from the wok. We then add the rice and stir-fry for 2 or 3 minutes. We then return the pineapples, the prawns and the pork to the wok and stir thoroughly. And we then will remove the wok from the heat.

4. The 4 step will begin by adding the basil and the fish sauce and toss them well. We will then fill the pineapple shells with the rice. And we will finally scatter the spring onions, the coriander and the chillies over the top. Now it`s ready to be served.
